INGREDIENTS

DOUGH:

•  2 1/4 cups (11.25 ounces) all-purpose flour (see note)
•  1/2 teaspoon salt
•  1 teaspoon sugar
•  1 tablespoon instant yeast
•  1 cup (8 ounces) warm water

TOPPING:

•  1/2 cup (4 ounces) very hot water
•  2 tablespoons baking soda
•  Coarse, kosher salt
•  3 tablespoons butter, melted
