- 1/2 yellow onion chopped
- 2 garlic cloves minced
- 1 cup brown rice (I prefer basmati)
- 1 cup vegetable broth
- 1 cup water
- 8 ounces crimini mushrooms sliced
- 1 tablespoon minced fresh thyme
- 3 tablespoon minced flat-leaf parsley
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
